A result of the blending of the three champagne rootstocks in which a majority of black grapes express the bountifulness of our soil and bring
with them fruity aromas that go with every tasting occasion and especially aperitifs.
Made from the same blend as the Brut, this first pressing has had added a slightly larger quantity of our home-made yeast sugar solution,
which gives it a delicate sweetness suitable for accompanying certain desserts or foie gras with a fig preserve.
A long time being aged in the cellars, a less sweet final dose of the yeast and sugar solution and a majority of black grapes are the
secrets of making this first pressing especially designed for food lovers. Connoisseurs appreciate the stronger, more full-bodied flavours.
Made from Pinot Noir grown on parcels of mature vines. We create a red wine “Coteau Champenois” that is a mix of reserved wines.
It’s this marriage that gives birth to a fruity, fine and delicate rosé which makes for enjoyable summer aperitifs or which can accompany
chicken dishes, white meats and desserts made from red fruits.
The finesse and elegance of our Chardonnays de Vauciennes come out in this wine from the first pressing. An exceptional
champagne with apple and pear flavours, yellow plums and white flowers, its liveliness stimulates the appetite and goes perfectly
with a silver salver of chilled seafood.
Made with a majority of white Chardonnay grapes fermented in oak barrels, and mixed with Pinot Noir kept in stainless steel vats,
all from the same year’s harvest. Lots of care and attentiveness go into the making of this trustworthy and individual vintage. The
blending of these noteworthy grape varieties from an exceptional year and the combination of different wine making methods give a strength
of flavour and a unique taste which will thrill connoisseurs and won’t leave wine lovers disappointed.
Only Pinot Noir and Chardonnay from this exceptional year make up this “top of the range” first pressing. With a rare elegance and a marvellous
finesse it is incredibly long lasting in the mouth. Excélia can be drunk without problem, whatever the hour, day or night, to celebrate a special moment.
